How does a baked fōnut compare to its fried cousin, the doughnut? Well, if you’re one of the lucky ones to have tried one, you’re probably going to rave about it.

(fōnuts), yes, complete with the parenthesis, has landed on west Third Street in Los Angeles. Celebrity dessert maker, Waylynn Lucas (formerly of José Andrés’ Bazaar and Patina) has teamed up with Nancy Truman to open this healthy(er) alternative to a doughnut. The fonuts are born of wheat-free banana bread batter that found its way into doughnut pans. Waylynn explains, “I’m using different methods of steaming and baking at high heat to replicate the light and fluffy texture of a doughnut — without frying”

Sparce, without tables and chairs, the place has hints of Norman Rockwell in the form of a sleek black counter and a “fresh & hot” neon sign above the entrance into the back. A chalkboard menu above the register and display complete the look. There’s a large espresso machine, and baking trays galore.
